Alder and Maple for smoking

I just recieved your book and when I read about woods for smoking I didn’t see Alder on your list of hardwoods . Here in Northwest Washington most of the folks use Alder and Maple. I think it’s because we smoke a lot of Salmon. Have you any experience using it for ribs?

I’m in Georgia, so I wouldn’t know an Alder tree if I ran into it. We mostly use hickory & oak. Sometimes pecan and mesquite. Not much maple down here either.

    Thanks,

I have used Alder for years and I think you would enjoy the flavor.
I have watched bbq comp for years and never seen anyone use it.
    Maybe I’M on to something.

    Thanks Dale
