This was really helpful.  I’ve decided on a Traeger.  This is just for my wife and me, maybe some family from time to time, but mostly just the two of us.  Your Competition Barbeque book is now my bible.  It is awesome and the food prepared following your instructions is the best we’ve ever eaten.  I’ve even “beat out” a friend who’s been smoking pork butts for years!  My first attempt at pork butt was better than his.  And I won’t tell him my secret, heh-heh…

 I judged for a contest recently, I wish I could of talked to the cook about buying your book. He or she would at least have a starting point. This cook was introuble when the 1st judge grabbed his rib bone and the meat stayed in the container, of course all the ribs did the same. OVER COOKED! Brisket had to be cooked by the same person, it was so tuff, nobody at our table, and I mean nobody, could even pull it apart, (no joke). Of course we showed it to the head offical so he could talk to the cook. As I said before, your book is at least a starting point.
