BBQ Contests and/or BBQ concessions…

I bought the Maverick thermometer, however the meat probe will not work on a rotisserie cooker.  I can use the meat probe to test the doness of the meat when I think it is about done.  I like the unit it is very accurate and I have calibrated all my thermometers by it.  I have a question if possible?  My wife and I are retired and I love to cook BBQ.  I can cook good ribs, boston butt, and chicken.  I have not yet tried to cook a beef brisket but plan to soon by your directions in the book.  I also have a complete catering trailer I built myself which can be used to cook anything.  We have thought about entering some of the BBQ Cook Off contest.  There is one in Panama City Bch this weekend.  Would it be a good one to go to see how things are done.  There is also one in Dothan, Ala a few weeks later, how about that one.  I have never entered a contest and need to know how to set up and the rules for entry.  As for the catering trailer In your opinion would it be worth the time and effort to set it up at the beach for the summer months and sell BBQ ribs and boston butt.  The wife and I would like to supplement our retirement income with a small project run by the two of us.  If you have had any experience with this sort of thing I would appreciate any advice.  We did cater the Army National Guard for over a year about 250 men, and did very well with this project.

    I’m not sure about the Panama City contest, but the Dothan, AL BBQ contest is a pretty big one. They are both sanctioned by the FBA which is good. Their rules are here http://www.flbbq.org/fba_rules.htm

    Don’t be afraid to enter one of these contests or both… it’s a lot of fun and the best way to learn how to cook good barbecue. If you get a chance, another option is to volunteer to be a judge. They always need good judges and sometimes they will train you the morning of the event. Just call the FBA or any BBQ society and just ask them how to volunteer to be a judge.

    As far as concessions go, I do not have experience with that but I have seen a book & DVD for sale on ebay about Concession BBQ Secrets – just go to http://www.ebay.com and search for “bbq concession” and you’ll see it in the listings.

    I agree with Bill’s comments. The way to get your feet wet is with a Back yard entry. This takes you through all of the same procedures as the pro teams at a lot lower cost. The big plus is that you are an insider with the professional teams and you really get a lot of experience. We would love to see you in Panama City. We are also haveing a judging class the night before the event. Check our web site and the FBA site as Bill suggested.
