Another BBQ Contest winner
Thanks Bill, I am a beginner at BBQ competition. I bought your book and have won third and second place brisket the last two cook-offs. My son in law does the chicken and ribs and this weekend is our first cookoff for the year and I have convinced him to use your receipes because at our last cookoff in November 08 I did everything by myself and placed 6th chicken and 5th ribs, but will admit I over cooked the chicken and the ribs because I not only had competition meat going, but I was trying to cook cornbread, peach cobbler while warming flour tortillas (yes we are in Texas) But I love the book and thank you for your wisdom and your knowledge and ever so grateful to you for putting it all down on paper. Sending just a couple of pics – An old horse trailer converted to hauling around my most prized bbq pit. Looking forward to more good times and hopefully an award or two. Thanks again

Picnic: Skin on or off?
Bill,
Should the skin be removed from a Picnic before the rub or left on during the bbq?
Great book with super info. Thanks for making it available.

Smoking a Brisket
Hi Bill
I live in England and have a real interest in BBQ. I purchased your book around half a year ago and it gave me a lot of information which has made my life so much easier when it comes to BBQ! I recently bought myself a horizontal barrel design smoker with a side firebox (not sure what you call these style barbecues officially!) and i’m looking to smoke my first Brisket next week.
I was wondering if you could give me a few tips please? As i live in England i don’t have access to a lot of the products you use in some of your recipes. Do you have any simple methods/tips on what i can inject my brisket with and what mop sauce i could possibly make up?
Also, what temp should i have the smoker at? And what internal temp am i ideally looking for? How long do you think it will take to cook?
Sorry for all the questions but i just want to make sure i get it right!
Many thanks in Advance!
Harry
