A fundraising event to benefit East Pasco Habitat for Humanity on April 4th in Dade City, FL (just North of Tampa). We will be having a Florida BBQ Association competition , many vendors, a children’s area, bike rides, entertainment and more. This BBQ contest is a FL BBQ Association State Championship and a Jack Daniels Qualifier. Note: Judge’s Seminar is March 14, 2009 on 04/03/09

Smoking a Brisket

Hi Bill

I live in England and have a real interest in BBQ. I purchased your book around half a year ago and it gave me a lot of information which has made my life so much easier when it comes to BBQ! I recently bought myself a horizontal barrel design smoker with a side firebox (not sure what you call these style barbecues officially!) and i’m looking to smoke my first Brisket next week.

I was wondering if you could give me a few tips please? As i live in England i don’t have access to a lot of the products you use in some of your recipes. Do you have any simple methods/tips on what i can inject my brisket with and what mop sauce i could possibly make up?

Also, what temp should i have the smoker at? And what internal temp am i ideally looking for? How long do you think it will take to cook?

Sorry for all the questions but i just want to make sure i get it right!

Brisket injection

I was trying to make the brisket injection and could not find the ingredients. I found McCormick Ajus “Gravy” but not French Ajus “Sauce”.

Could not find the Moore’s Marinade or Tx Pete Hot sauce. Are there substitutes, or do you have another good brisket injection. Is this one a “great one”, or should I just use another?

Dark BBQ Sauce

Hi Bill
I purchase an ebook for barbeque. I love it and I am very happy.
I am having some problems with the barbeque sauce. I am trying to develop it and I not sure what to do. Because I am from the north some of our taste buds could be a little different. I know you said that there is many combinations of a sauce but the biggest problem I have is how can I get my sauce to be dark like most sauces. What in the process or content do I need to add.
The rib rub (Kansas city) and the process is outstanding !!!! I just need to tweek it because I use a grill. The money is in the sauce. This is taking some time. Any help would be wonderful.
