Oversmoked ribs

I have a question in regards to smoking meat. My question is this, what is the proper amount of smoke that should be applied to the meat when smoking? I have an offset smoker made by char broil and I recently smoked two racks of ribs. Should the smoke that is exiting the smoke stack be thick or thin? I used hickory wood chunks to smoke my ribs. I notice that when I bit into the ribs there was an after taste to the ribs. I want to get this right because I have family members that want me to smoke some ribs and pork shoulder for Christmas dinner. I’m sending out an SOS for smoking meat help.

Hey bill i am talking with my neighboring fire department about doing a cookoff between other fire departments. They have a tractor show and they cook bbq every year i mentioned this and they like it what do i need to do, where, or who do i need to talk to about judging and what to do. This will be more of a bragging rights type deal for this coming year the following year maybe different

Pellet Smokers

I have been considering making the switch to a pellet smoker.  I believe you have reviewed and smoked on both the Traeger and FEC100.  I was wondering how well the Traeger is insulated compared to the Fast Eddy. It’s my understanding the FEC100 has a remarkable recovery time.  How does the Traeger compare?  Specifically the Traeger Texas is the unit I am interested in.  Any help you can provide would be appreciated.  Thanks.

Dual probe BBQ thermometer

   Over a year ago I bought a Maverick Dual Probe Remote BBQ Thermometer from you. Although it does a good job when it’s finally operating it has got to be the most user UN-friendly piece of electronics that I own. Trying to set it usually results in three, four or more tries in spite of following the instructions at each use.

  Aren’t there any dual probe thermometers that are simpler to set-up and use? The steps are reminiscent of my Garman GPS that I have in my car that takes 10 minutes of effort to set-up before I pull out of the driveway. Even any new computer software is usually, “Plug and play.”

  I would certainly like a temperature probe that sets-up faster so that my smoke hasn’t began to cool down while waiting for the probe.

  Finally, another problem that I see with the Maverick is; The cables are too short! I own a Smoky Mountain – Great Outdoors vertical shelving smoker and the cables are too short to place the transmitter anywhere but on the hot, top surface of the smoker. I usually have to place a chair or stool too close to the smoker to have a place to set the transmitter.

Maverick ET-73

Hey Bill,
I just ordered two items from your store using Pay Pal. The LED light and The Taylor 1471 Temp. gage. Then I saw the Maverick ET-73, which is a dual probe also with a remote sensor. I just did this 5 minutes age. Can I somehow upgrade or what is your opinion of these two? I use a Smokin Tex Box and I thought it might be useful to see how accurate the setting is on my unit.

It’s been a while since this competition, but as busy as I have been, I am just getting around to sending you a picture of my plaque.  The experience of this competition has me wanting to do about 3 or 4 next year.  My wife also wants to be involved. We both had a blast. Using your tips, I have taken my bbq to a new level.  I did about a half dozen turkeys for thanksgiving.   People love my experiments.  Thank you for putting out such a wonderful book.  I was also the one that asked you if you ever did a smoked meatloaf.  Have you had a chance to try that out yet?
