Crooked bones on spareribs

Hello Bill the reason why im responding to you this ways is because I cant seem to log into the blog/comment area. Its been a long time since Ive logged in so when I tried to my info couldnt be found and I havent changed anything.. Where do I go to re-register again for the blog/comments? Also since Im already emailing you could you tell me why the bones in my pork ribs curve after Ive cooked them for 4-5hrs? I can never get a straight cut from them?! I buy pre packaged vacuum sealed spare ribs from Costco or Smart N Final and I cut them down to St. Louis Style ribs before cooking. Thanks

Barbecue contest questions

Hi,
I’m a Yankee interested in BBQ.
 
Just wondering at the competitions do the teams actually cook & sell to the general public in attendance ?
 
Do the Teams or many of them have day jobs in Commercial Restaurant BBQ operations? If so what % as a guess?
 
Looks like teams come prepared – lots of trappings. Looks like you have an expensive vehicle and support equipment making for a large investment? Can you spek to this, just interested.

HI BILL.LAST NITE I WATCHED A BBQ COMPETITION THAT I HAD TAPED FROM THE FOOD CHANNEL.TURNS OUT IT WAS THE ONE THAT YOU WON IN TRYON,N.C. CONGRATULAIONS. THE T.V. COVERAGE SURE CONCENTRATED ON TEAMS OTHER THAN YOURS. A COUPLE OF TIMES CHATHAM WAS MENTIONED AS THEY FEATURED TEAM AFTER TEAM  – MOSTLY BITCHING ABOUT  HOW THEY HAD SCREWED UP THIS OR THAT AND OFFERING MULTIPLE EXCUSES FOR THEIR SCREW – UPS. GOOD LORD, THEY WERE WORSE THAN GOLFERS WHEN IT COMES TO QUOTING FROM THE EXCUSE BOOK.YOU OBVIOUSLY JUST WENT QUIETLY ABOUT YOUR WORK AND GOT THE JOB DONE. I SAID”HEY, THATS THE GUY THAT SENDS ME EMAILS ALL THE TIME.” WELL,ANY QUESTIONS I HAD REGARDING YOUR EXPERTISE WERE PUT TO BED LAST NITE.NOW, DO YOU THINK THAT IF I BOUGHT AND STUDIED YOUR BOOK THAT I COULD MASTER YOUR TECHNIQUES WITHOUT SPENDING A LOT ON EQUIPMENT? I OWN A BIG BROIL KING  WITH A STEEL WOOD-CHIP BOX AND WOULD BE WILLING TO INVEST IN A SMALL SMOKER. WHAT DO YOU THINK, BOSS??? REGARDS, JIM

Cherry ribs

Bill:

I have a Barbeque party close to my property who makes and sells Cherry Smoked spare ribs.  They are quite dry – yet moist.  They are so good it is unbelieveable.  You should see the line of people in front of his concession stand.  These ribs are so delicious that you do not need any BQ sauce on them.

I would give my left arm to be able to make those ribs – can you be any help??

All I know, is that he starts his ovens at about 3:00 AM.  The ribs are done before noon when he opens up for business. 

What I’m look for is a recipe and instructions on how to bake. 

Please let me know if there would be a charge for this.

Great BBQ book

Just wanted to let you know that your BBq competition secrets was well worth the money,My father taught me and he had been cooking for 60 years. He would turn over in his grave had he known the secrets that I have tried using your book. Great brisket and the best ribs I have ever cooked. Thanks for the help in your book and hope you keep the good work up.

What smokers do you use?

Hey Bill – congratulations on your win in Tryon!  What type of cooker were you using?  I’m having trouble controlling the heat on my cooker and am in the market for a new one.  I’ve looked at Superiors, Stumps and FEC100s.  All look good to me.  Thanks.

Chatham Artillery BBQ wins back to back Grands in Tryon, NC! Using the exact same details in these videos, the Chatham Artillery BBQ Team won for the second year in a row at the 2010 Tryon, NC Blue Ridge BBQ & Music Festival. We took 2nd in chicken, 4th in ribs, 13th in pork, and 4th in brisket.

3rd overall at the Georgia Barbecue Classic

Congrats to Danny Coogle “AGAIN”… Danny Coogle “Pit Bulls Up In Smoke” took 3rd place overall out of 40 teams and won 3rd place in brisket yesterday at the Georgia BBQ classic in Cartersville, GA.
