Wow ! Interesting ! How in the world can BBQ be so different from one place to another is beyond me ! Is there a key to try to make BBQ the same at each event ? If product is the same, how can scores be so much off center! Or is it just the luck of the draw “of judges” !

Smoking BBQ in the UK

Hi Bill,

I bought your book when I was working in Texas, with great results – a cheapo offset smoker combined with your advice made me a very popular party host, so thanks!

A question for your blog: I’ve now moved back home to the UK, and I’m looking to buy a “proper” bbq, so I figure I should get the expert’s advice on what to get. Thing is, I’m torn between different requirements – smoking is the main thing, but it’s important to be able to grill a steak as well, and that makes something like the Fast Eddie seem like a bad plan. I’m similarly torn on the fuel type: charcoal appeals to my caveman instincts (drink beer, grunt at fire), while electronic pellet hoppers feel like cheating but I can see the appeal of getting a good night’s sleep.

So what would you advise for a back-yard hobbyist? The Weber Smokey Mountain seems like a pretty good compromise, but I’d really appreciate any advice you can give. Are there any good options that work well for smoking *and* grilling?

Good BBQ?

Hello Bill,
We always love good bbq. We recently bought a dutch oven and we are trying to learn how to cook in it. I’ve never been a big bbq cooker. I guess after several times of cooking it and it still turns out tough or burnt, you kinda give up. We cooked some ribs for the first time in my life last weekend and they came out fair. I learned you have soak them for a while. I’m not much on cooking except for Beans. I love my beans. I was wondering if you have any dutch oven recipes to we could try out? I thought about buying your book, but right now money is real tight, maybe closer to xmas

Exploding ribs

Bill, really like your e-mails and such. I have a question. Why would so many ribs explode (4) when I was BBQ. I thought to much moisture in the bone, but not really sure. any help. These were pork ribs. I have learned a lot from all of the info you have provided that I am not teased by my kids who use to say who wants BURNBBQ. So as you can see I have learned a lot, So any help would be grateful. Richard.
