BBQ contest success…
Bill,
I wanted to let you know that I was in my first ever sanctioned competition over Labor Day and used your book to help me. I had purchased it last year when I did a backyard style BBQ that was just a chicken and ribs contest. This time I started out at a KCBS event which is the only KCBS event in this area (North Texas). I was real nervous, but by using your recipes I was able to accomplish a 5th in Pork and 4th in Brisket. My chicken and ribs finished both in 30th place out of 50 teams so still respectable, but I didn’t follow your style on those (wish I had). I ended up in 10th overall and was very excited. Last weekend I did a chicken and ribs gig again but this year it was sanctioned. I adapted your style to half chickens and won 5th place out of 55 teams, but didn’t place in ribs.
Going to see if I can keep the streak going with my 3rd comp this weekend. I’ll be using your brisket recipe again and chicken is ½ chicken. Going to play around with the taste of the ribs to see if I can get the scores up. At least the field will be smaller with less than 30 teams.
Just wanted to drop you a note to say thanks that I wouldn’t have been able to do it without your book and with the little taste of success, I’m hooked.
Thank you,
Wayne Orchard

3rd place chicken in Winder, GA
Bill,
I just wanted to thank you for your videos. I recently competed in my first pro competition at the Jug Tavern Festival in Winder, GA. This was actually my second contest ever, and as I said before first as a pro, I took 3rd place in Chicken using your hot and fast chicken method! I had absolutely perfect bite thru skin and my flavors were great! As the videos are time released I hope to improve my other scores and to improve on my presentation in the pork category! Thanks for everything and I hope to be able to provide you with more success stories in the future!
