happy new year to u ,if ur in the philippines try to visit cebu wer u cud taste the best lechon in the phil.just recently we in mindanao 4 our reunion i dont know how many times we hav lechon the day we arrive cagayan up to the day we depart cagayan. in cebu there is this outlet w/c sell lechon they  sell 50 or more heads in one day we cud visit their lechon factory and u’ll be surprice how the roast the pig  happy new year again

Hi Bill,
I recently reviewed your news article May-2006 BBQ- Philippine Style…very good documentation of the process. I am interested in doing such a pig roast for an upcoming Hawaiian Luau party with friends for a special event. I have been recruited to cook the 100# hog and your experience seemed worthy of the Philippine Style effort. Do you discuss the Philippine concepts with detail in your BBQ Secrets book? I am familiar with most of the stuffing ingredients except for the three spice/herb packets (2 small square and 1 long skinny in the pics). Where were you in the Philippines as I gather the flavors can vary by region?
